Being a WAHM definitely has its benefits. Aside from having the benefit of working in the comfort of my house and having the tv on while I work. And I get to catch almost all my favorite shows even at the oddest hours.
.
And some of my favorite shows involve food. Yes, all sorts of cooking shows are part of my daily viewing regimen. Its another one of my multi-tasking skills. Working on the laptop with one eye glued to the computer screen and the other eye glued to the boob tube…especially when a particularly yummy dish is being cooked. Serves as an inspiration to what I might cook for dinner, actually.

One of the things I regret not doing is going to culinary school. After I graduated from college, I applied and was accepted to one of the more prestigious culinary schools in the world. The Cordon Bleu in London. Yes, I was supposed to take up a comprehensive culinary course in one the best cooking schools there is. And I didn’t go…why? Long story but lets just say that life got in the way.

One of my favorite “melted” foods would have to be cheese. Be it in pizza, pasta, soup, or even on a grilled sandwich….I am in gastronomic nirvana whenever I get even as little as a whiff of the smell of melted cheese.
So last night I found myself with a little bit of a craving for cheese. I went through the contents of my freezer and cupboard and decided to concoct something for dinner that would satisfy 2 things…my hankering for cheese and my desire to eat healthy. So this is what I prepared….

TADAHHH!!! Spinach, Mushroom and Bacon Lasagna!!! Hearty and healthy at the same time.

I was very fortunate to be invited to the launch of Italiannis new lunch offerings. Dubbed as “Small Price for a Big Lunch”, the new dishes concocted by their main man, Chef Sonny Ong, definitely packs a punch. And for a fraction of the price that you would pay at any other upscale resto.
I made sure to go on an empty stomach because I was pretty sure that I was in for a night of gastronomic enjoyment. And I was right. All the dishes were served with a generous helping of mixed veggies and Spaghetti Aglio Olio (garlic and oil).
First up was Pesci in Vino Blanco or Fish Fillet in White Wine. The fish used was Cream Dory and was cooked en papillote or baked in a paper package. I must say, this was a winner. The fish was succulent and perfectly cooked. Being a big fan of Dory fillets, I’m sure this is something I will come back for again and again. Another plus point, its great for those on a diet.
